A spicy and hearty chicken chili with Cajun flavors.
Ingredients

- 1 lb chicken breast, diced
- 1 can white beans, drained
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add diced chicken and cook until browned.
- Stir in Cajun seasoning, cumin, salt, and pepper.
- Add white beans, corn, and chicken broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Serve hot with your choice of toppings.
Notes
- Adjust spices to your taste.
- Top with cilantro or cheese if desired.
- Can be made ahead and stored in the fridge.
