Ingredients

  • 1/2 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup ricotta cheese
  • 1/4 cup mini chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and cocoa powder.
  3. In another bowl, cream the butter until smooth.
  4. Add ricotta cheese, vanilla, and almond extract to the butter and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in mini chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet.
  8. Bake for 12-15 minutes or until edges are firm.
  9. Let cookies cool before filling.
