A delicious and hearty Caprese Breakfast Casserole featuring layers of tomatoes, basil, and mozzarella cheese.

- 6 large eggs
- 1 cup milk
- 2 cups diced tomatoes
- 1 cup fresh basil, chopped
- 1 cup mozzarella cheese, shredded
- 1 cup bread cubes
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs and milk.
- Add the diced tomatoes, chopped basil, and salt and pepper. Mix well.
- Stir in the bread cubes and half of the mozzarella cheese.
- Pour the mixture into a greased baking dish.
- Top with the remaining mozzarella cheese.
- Bake for 30-35 minutes or until the casserole is set and golden on top.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like spinach or bell peppers.
- Store leftovers in the refrigerator for up to 3 days.
