A delicious caramelized banana cheesecake topped with a rich rum glaze.
Ingredients

- 2 cups cream cheese
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed bananas (about 2 ripe bananas)
- 1/2 cup sour cream
- 1/4 cup butter
- 1/4 cup brown sugar
- 1/4 cup dark rum
- 1 teaspoon cinnamon
- 1 pre-made graham cracker crust
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, blend cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, mashed bananas, and sour cream.
- Pour the mixture into the graham cracker crust.
- Bake for 50 minutes or until set.
- In a saucepan, melt butter and brown sugar over medium heat.
- Add rum and cinnamon, stirring until smooth.
- Remove the cheesecake from the oven and let it cool.
- Drizzle the rum glaze over the cooled cheesecake before serving.
Notes
- Use ripe bananas for better flavor.
- Let the cheesecake chill for at least 4 hours before serving.
- Store leftovers in the refrigerator.
