Ingredients

  • 3 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup goat cheese, crumbled
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a pan over medium heat.
  3. Add sliced onions and cook until soft and golden, about 20 minutes.
  4. Stir in balsamic vinegar, sugar, salt, and pepper. Cook for another 5 minutes.
  5. Roll out the puff pastry on a baking sheet.
  6. Spread the caramelized onion mixture over the pastry.
  7. Sprinkle goat cheese on top of the onions.
  8. Brush the edges of the pastry with beaten egg.
  9. Bake for 25-30 minutes, or until golden brown.
