A flavorful Caribbean dish featuring chicken and rice cooked with spices.
Ingredients
Scale
- 2 cups of long-grain rice
- 1 pound of chicken thighs, skinless
- 1 can of coconut milk
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 2 cups of chicken broth
- 1 teaspoon of thyme
- 1 teaspoon of allspice
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large pot, heat oil over medium heat and sauté onions and garlic until soft.
- Add chicken thighs and brown on both sides.
- Stir in bell pepper, thyme, allspice, salt, and pepper.
- Add rice, coconut milk, and chicken broth to the pot.
- Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
- Remove from heat and let it sit covered for 5 minutes before serving.
Notes
- Serve with lime wedges for added flavor.
- Can substitute chicken thighs with fillet if preferred.
- Adjust spices according to your taste.
