Ingredients

  • 2 cups of long-grain rice
  • 1 pound of chicken thighs, skinless
  • 1 can of coconut milk
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 cups of chicken broth
  • 1 teaspoon of thyme
  • 1 teaspoon of allspice
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, heat oil over medium heat and sauté onions and garlic until soft.
  3. Add chicken thighs and brown on both sides.
  4. Stir in bell pepper, thyme, allspice, salt, and pepper.
  5. Add rice, coconut milk, and chicken broth to the pot.
  6. Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
  7. Remove from heat and let it sit covered for 5 minutes before serving.

Notes

  • Serve with lime wedges for added flavor.
  • Can substitute chicken thighs with fillet if preferred.
