  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 bay leaves
  • 1/2 cup olives, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion, bell pepper, and garlic to the pot. Sauté until soft.
  5. Add chopped tomatoes, beef broth, tomato paste, oregano, cumin, salt, and pepper.
  6. Return beef to the pot and add bay leaves.
  7. Simmer on low heat for 1.5 to 2 hours until beef is tender.
  8. Stir in olives and cilantro before serving.
