- 1 cup grated carrots
- 1 cup grated zucchini
- 1 cup grated apple
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder

- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix grated carrots, zucchini, and apple.
- In another bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together oil and eggs.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the grated vegetables and apple.
- Fill muffin tins with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let muffins cool completely.
- For frosting, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla, mixing until creamy.
- Frost cooled muffins with cream cheese frosting.

- Store leftovers in an airtight container.

- Adjust sweetness by adding more or less sugar.
