Ingredients

  • 1 cup grated apple
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix grated carrots, zucchini, and apple.
  3. In another bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In a separate bowl, whisk together oil and eggs.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the grated vegetables and apple.
  7. Fill muffin tins with batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let muffins cool completely.
  10. For frosting, beat cream cheese and butter until smooth.
  11. Add powdered sugar and vanilla, mixing until creamy.
  12. Frost cooled muffins with cream cheese frosting.
