Delicious and moist carrot cake balls coated in cream cheese frosting.
Ingredients

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix grated carrots, flour, sugar, oil, eggs, and vanilla.
- Add baking powder, baking soda, salt, and cinnamon. Stir well.
- Pour the mixture into a greased baking pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- In a separate bowl, mix cream cheese and powdered sugar until smooth.
- Once the cake is cool, crumble it into a large bowl.
- Add the cream cheese mixture to the crumbled cake and mix until combined.
- Roll the mixture into small balls and place them on a baking sheet.
- Chill in the refrigerator for 1 hour before serving.

- Store in an airtight container in the refrigerator.
- Can be frozen for longer shelf life.
