Description
Carrot cake cheesecake combines the flavors of carrot cake and cheesecake for a unique dessert.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- ½ cup crushed pineapple, drained
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup chopped walnuts (optional)
Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla, carrots, pineapple, cinnamon, and nutmeg.
- Pour batter over the crust in the springform pan.
- Bake for 60 minutes or until center is set.
- Let cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh carrots for better flavor.
- Top with cream cheese frosting for added sweetness.
- Store leftovers in the refrigerator.
