Ingredients

  • 1 cup granulated sugar
  • 3 large eggs

  • 1 cup grated carrots
  • ½ cup crushed pineapple, drained
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter in a bowl.
  3. Press mixture into the bottom of a springform pan.
  4. In another bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Stir in vanilla, carrots, pineapple, cinnamon, and nutmeg.
  7. Pour batter over the crust in the springform pan.
  8. Bake for 60 minutes or until center is set.
  9. Let cool, then refrigerate for at least 4 hours before serving.
