Ingredients

- 2 cups all-purpose flour
- 1 cup grated carrots
- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup buttermilk
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk eggs, melted butter, and buttermilk.
- Combine wet and dry ingredients.
- Fold in grated carrots, raisins, and walnuts.
- Roll out the dough and cut into strips.
- Layer the strips and twist them into muffin tins.
- Bake for 20-25 minutes until golden brown.
- Let cool before serving.
