Ingredients

- 4 large carrots, peeled and thinly sliced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Peel and slice the carrots into thin ribbons.
- Grate the fresh ginger.
- In a bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Add the carrot ribbons and ginger to the bowl.
- Toss everything until well coated.
- Garnish with fresh parsley before serving.
Notes
- Adjust the sweetness by adding more honey if desired.
- For a spicy kick, add a pinch of red pepper flakes.
- This salad can be made a few hours in advance.
