A hearty casserole featuring beef, beans, and corn topped with cornbread.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 box cornbread mix
- 1 egg
- 1/3 cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat.
- Add black beans, corn, tomatoes, and taco seasoning to the skillet.
- Mix well and cook for 5 minutes.
- Transfer the beef mixture to a greased casserole dish.
- Prepare the cornbread mix according to package instructions.
- Spread the cornbread batter over the beef mixture.
- Bake for 25-30 minutes until the cornbread is golden brown.
- Sprinkle shredded cheese on top and bake for an additional 5 minutes.
Notes
- Serve with sour cream and green onions for garnish.
- Can substitute ground turkey for a leaner option.
