Ingredients
- Ground beef: 1 lb (450 g)
- Diced tomatoes: 1 can (14.5 oz or 410 g)
- Kidney beans: 1 can (15 oz or 425 g), drained and rinsed
- Corn: 1 can (15 oz or 425 g), drained
- Bell peppers: 1 cup, diced (about 1 medium bell pepper)
- Onion: 1 medium, diced
- Garlic: 2 cloves, minced
- Chili powder: 2 tablespoons
- Cumin: 1 teaspoon
- Shredded cheese: 2 cups (about 8 oz or 225 g)
- Olive oil: 1 tablespoon (for cooking)
- Salt and pepper: to taste
Instructions
- Preheat your oven to 350°F (175°C) and prep all ingredients.
- Heat olive oil in a skillet, add ground beef, and cook until browned. Drain excess fat.
- Add diced onion, bell peppers, and minced garlic to the skillet and sauté until softened.
- Stir in chili powder and cumin, then add diced tomatoes, kidney beans, and corn. Simmer for 5 minutes.
- In a greased baking dish, layer half of the beef mixture, sprinkle with 1 cup of cheese, add the remaining mixture, and top with the rest of the cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly. Let cool before serving.
