Description

Ingredients

  • Ground beef: 1 lb (450 g)
  • Diced tomatoes: 1 can (14.5 oz or 410 g)
  • Kidney beans: 1 can (15 oz or 425 g), drained and rinsed
  • Corn: 1 can (15 oz or 425 g), drained
  • Bell peppers: 1 cup, diced (about 1 medium bell pepper)
  • Onion: 1 medium, diced
  • Garlic: 2 cloves, minced
  • Chili powder: 2 tablespoons
  • Cumin: 1 teaspoon
  • Shredded cheese: 2 cups (about 8 oz or 225 g)
  • Olive oil: 1 tablespoon (for cooking)
  • Salt and pepper: to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and prep all ingredients.
  2. Heat olive oil in a skillet, add ground beef, and cook until browned. Drain excess fat.
  3. Add diced onion, bell peppers, and minced garlic to the skillet and sauté until softened.
  4. Stir in chili powder and cumin, then add diced tomatoes, kidney beans, and corn. Simmer for 5 minutes.
  5. In a greased baking dish, layer half of the beef mixture, sprinkle with 1 cup of cheese, add the remaining mixture, and top with the rest of the cheese.
  6. Bake for 25-30 minutes until cheese is melted and bubbly. Let cool before serving.
