Description

A healthy and low-carb alternative to traditional fried rice using cauliflower and shrimp.


Ingredients

  • 1 head of cauliflower, riced
  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 1 cup of peas and carrots
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 2 tablespoons of soy sauce
  • 1 teaspoon of garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rice the cauliflower in a food processor.
  2. Heat olive oil in a pan over medium heat.
  3. Add shrimp and cook until pink, about 3-4 minutes.
  4. Remove shrimp and set aside.
  5. Add peas, carrots, and garlic to the pan, sauté for 2-3 minutes.
  6. Add riced cauliflower and stir-fry for 5-7 minutes.
  7. Push veggies to the side, pour in beaten eggs, and scramble.
  8. Add shrimp back to the pan.
  9. Pour in soy sauce, stir well, and season with salt and pepper.
  10. Garnish with green onions and serve hot.

Notes

  • For extra flavor, add sesame oil.
  • Use fresh shrimp for the best taste.
  • Adjust the amount of soy sauce to your preference.
