A flavorful Indian dish made with cauliflower in a rich, spiced tomato sauce.
Ingredients

- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- Salt to taste
- Cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, salt, and half of the spices.
- Spread cauliflower on a baking sheet and roast for 25 minutes.
- In a large pan, heat olive oil over medium heat. Add onion and sauté until soft.
- Add garlic and ginger, cook for 2 minutes.
- Stir in remaining spices, then add diced tomatoes and coconut milk.
- Simmer for 10 minutes.
- Add roasted cauliflower to the sauce and stir to combine.
- Cook for an additional 5 minutes.
- Garnish with cilantro before serving.
