Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • Salt to taste
  • Cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, salt, and half of the spices.
  3. Spread cauliflower on a baking sheet and roast for 25 minutes.
  4. In a large pan, heat olive oil over medium heat. Add onion and sauté until soft.
  5. Add garlic and ginger, cook for 2 minutes.
  6. Stir in remaining spices, then add diced tomatoes and coconut milk.
  7. Simmer for 10 minutes.
  8. Add roasted cauliflower to the sauce and stir to combine.
  9. Cook for an additional 5 minutes.
  10. Garnish with cilantro before serving.
