Description
A warm and comforting soup made with cauliflower and turmeric.
Ingredients

- 1 head of cauliflower, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon turmeric powder
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and sauté until translucent.
- Add garlic and ginger, cooking for an additional minute.
- Stir in turmeric powder and cauliflower, cooking for 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes until cauliflower is tender.
- Puree the soup with an immersion blender until smooth.
- Stir in coconut milk and season with salt and pepper.
- Heat through and serve warm.
Notes
- Adjust the thickness by adding more or less broth.
- Garnish with fresh herbs if desired.
