Ingredients

  • 1 head of cauliflower, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and sauté until translucent.
  3. Add garlic and ginger, cooking for an additional minute.
  4. Stir in turmeric powder and cauliflower, cooking for 5 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20 minutes until cauliflower is tender.
  7. Puree the soup with an immersion blender until smooth.
  8. Stir in coconut milk and season with salt and pepper.
  9. Heat through and serve warm.

Notes

  • Adjust the thickness by adding more or less broth.
  • Garnish with fresh herbs if desired.
