Description
A creamy and hearty cheddar broccoli potato soup.
Ingredients

- 4 cups broccoli florets
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onions and garlic. Sauté until onions are translucent.
- Add diced potatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add broccoli and cook until tender, about 5 minutes.
- Stir in milk and cheddar cheese. Mix until cheese is melted.
- Season with salt and pepper. Serve hot.
Notes
- For a thicker soup, blend a portion of the soup and return it to the pot.
- Garnish with extra cheddar cheese if desired.
