A creamy and hearty cheddar broccoli potato soup.


Ingredients

  • 4 cups broccoli florets
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onions and garlic. Sauté until onions are translucent.
  3. Add diced potatoes and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Add broccoli and cook until tender, about 5 minutes.
  6. Stir in milk and cheddar cheese. Mix until cheese is melted.
  7. Season with salt and pepper. Serve hot.

Notes

  • For a thicker soup, blend a portion of the soup and return it to the pot.
  • Garnish with extra cheddar cheese if desired.
