Description
A creamy and tangy macaroni salad with cheddar and sour cream.
Ingredients

- 2 cups elbow macaroni
- 1 cup sharp cheddar cheese, shredded
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup green bell pepper, diced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to the package instructions. Drain and rinse under cold water.
- In a large bowl, combine the sour cream and mayonnaise.
- Add the Dijon mustard, salt, and pepper to the dressing and mix well.
- Add the cooked macaroni to the dressing and stir to coat.
- Fold in the cheddar cheese, celery, red onion, and green bell pepper.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a lighter version, use Greek yogurt instead of sour cream.
- You can add cooked bacon for extra flavor.
- Store leftovers in an airtight container in the refrigerator.
