Ingredients

  • 2 cups elbow macaroni
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/4 cup green bell pepper, diced
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to the package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the sour cream and mayonnaise.
  3. Add the Dijon mustard, salt, and pepper to the dressing and mix well.
  4. Add the cooked macaroni to the dressing and stir to coat.
  5. Fold in the cheddar cheese, celery, red onion, and green bell pepper.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • For a lighter version, use Greek yogurt instead of sour cream.
  • You can add cooked bacon for extra flavor.
