- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 can white beans, drained and rinsed
- 1 cup vegetable broth
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions.
- In a pan, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add fresh spinach and cook until wilted.
- Stir in white beans and vegetable broth.
- Add cooked orzo and mix well.
- Stir in shredded cheese until melted.
- Season with salt and pepper.
- Serve warm.

- Can add more vegetables if desired.
