- 8 oz pasta
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- 1 can black beans, drained
- 1 cup corn
- 2 cups diced tomatoes
- 1 cup chicken or vegetable broth
- 1 tbsp olive oil
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add diced tomatoes, black beans, corn, and taco seasoning. Stir well.
- Pour in the broth and bring to a simmer.
- Add cream cheese and cheddar cheese. Stir until melted and smooth.
- Add the cooked pasta to the skillet. Mix well to combine.
- Serve hot, garnished with additional cheese if desired.

- Use any pasta of your choice.
- Top with sour cream or avocado for extra flavor.
