Ingredients

- 1 cup rice
- 2 cups water
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 can black beans, drained
- 1 cup corn
- 1 diced tomato
- 1/2 cup chopped green onions
Instructions
- In a pot, bring water to a boil.
- Add rice and taco seasoning. Stir well.
- Cover and reduce heat. Simmer for 20 minutes.
- Stir in black beans, corn, and diced tomato.
- Cook for an additional 5 minutes.
- Remove from heat and mix in shredded cheese.
- Garnish with green onions before serving.

- Use your favorite type of cheese.
- For extra flavor, add cooked ground beef or chicken.
