- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons chopped cilantro (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Transfer the mixture to a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro if desired.
