Description
This Cherry Almond Upside Down Cake features a sweet layer of cherries topped with a moist almond-flavored cake.
Ingredients
- Fresh cherries – 2 cups, pitted and halved
- Unsalted butter – 1/2 cup (1 stick), melted
- Brown sugar – 1/2 cup, packed
- All-purpose flour – 1 1/2 cups
- Granulated sugar – 1/2 cup
- Baking powder – 1 1/2 teaspoons
- Salt – 1/4 teaspoon
- Milk – 1/2 cup
- Eggs – 2 large
- Almond extract – 1 teaspoon
- Sliced almonds – 1/4 cup (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or cooking spray.
- In a medium bowl, combine melted butter and brown sugar. Pour this mixture into the bottom of the prepared cake pan. Arrange halved cherries, cut side up, over the brown sugar mixture.
- In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In another bowl, beat the eggs, then add milk and almond extract. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Carefully pour the batter over the arranged cherries in the cake pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then invert onto a serving plate.
- Allow to cool slightly before slicing. Garnish with sliced almonds and serve warm or at room temperature.
