  • 1 Homemade Pie Crust or 1 All Butter Pie Crust (store-bought)
  • 4 and 1/2 cups fresh cherries, pitted, halved, and quartered
  • 2/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 Tablespoon lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract
  • 1 Tablespoon cold unsalted butter
  • 1 large egg (for egg wash)
  • 1 Tablespoon milk (for egg wash)
  • Optional: Coarse sugar for sprinkling on top

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare a 9-inch pie dish by greasing and lining it with one pie crust.
  2. In a large bowl, combine the pitted and quartered cherries with granulated sugar, cornstarch, lemon juice, vanilla, and almond extract. Mix gently to coat the cherries and set aside in the refrigerator.
  3. Roll out the second pie crust into a 12-inch circle. For a lattice topping, cut the crust into strips.
  4. Transfer the cherry filling into the prepared pie crust, ensuring the cherries are evenly distributed. Drizzle any leftover juice (thickened in a saucepan) over the filling, and dot the mixture with cold butter pieces.
  5. If using a lattice crust, weave the strips over the filling, pressing the edges to seal. If using a whole top crust, cut slits to allow steam to escape.
  6. Brush the top crust with a mixture of egg wash (egg and milk). Optionally, sprinkle with coarse sugar.
  7. Bake for 20 minutes, then reduce the temperature to 375°F (190°C) and continue baking for 30-40 minutes until golden and bubbly.
  8. Remove from the oven and let it cool on a wire rack for 3-4 hours before serving to allow the filling to set.

Notes

  • Make sure to use fresh cherries for the best flavor, or thaw and drain frozen cherries.
  • Allow the pie to cool completely for better slicing.
  • For a twist, add a pinch of cinnamon or nutmeg to the filling for extra warmth.
