A delicious Cherry Upside Down Cake with a caramel topping and moist cake.

- 1 cup fresh or frozen cherries, pitted (about 150 grams)
- 1/2 cup unsalted butter (113 grams), divided
- 1 cup brown sugar (200 grams)
- 1 cup all-purpose flour (125 grams)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar (100 grams)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk (120 ml)
Instructions
- Prepare the cherries: If using fresh cherries, wash and pit them. If using frozen cherries, thaw and drain any excess liquid. Preheat your oven to 350°F (175°C).
- Make the caramel topping: In a medium saucepan over low heat, melt 1/4 cup (57 grams) of the unsalted butter. Stir in the brown sugar until well combined. Pour the mixture into the bottom of a 9-inch (23 cm) round cake pan and arrange the cherries on top.
- Prepare the cake batter: In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, cream together the remaining 1/4 cup (57 grams) of unsalted butter and granulated sugar until light and fluffy.
- Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.
- Combine dry and wet ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk, mixing until just combined.
- Pour the batter: Carefully pour the cake batter over the arranged cherries in the cake pan, smoothing the top.
- Bake the cake: Place the cake in the oven and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Cool and invert: Let the cake cool in the pan for about 10 minutes. Run a knife around the edges and invert onto a serving plate.
- Serve: Allow the cake to cool slightly before slicing. Serve warm or at room temperature.
Notes
- For extra flavor, add a teaspoon of almond extract to the batter.
- Mix in cherry juice or liqueur for a more intense cherry flavor.
