Instructions

  1. Prepare the cherries: If using fresh cherries, wash and pit them. If using frozen cherries, thaw and drain any excess liquid. Preheat your oven to 350°F (175°C).
  2. Make the caramel topping: In a medium saucepan over low heat, melt 1/4 cup (57 grams) of the unsalted butter. Stir in the brown sugar until well combined. Pour the mixture into the bottom of a 9-inch (23 cm) round cake pan and arrange the cherries on top.
  3. Prepare the cake batter: In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, cream together the remaining 1/4 cup (57 grams) of unsalted butter and granulated sugar until light and fluffy.
  4. Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.
  5. Combine dry and wet ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk, mixing until just combined.
  6. Pour the batter: Carefully pour the cake batter over the arranged cherries in the cake pan, smoothing the top.
  7. Bake the cake: Place the cake in the oven and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Cool and invert: Let the cake cool in the pan for about 10 minutes. Run a knife around the edges and invert onto a serving plate.
