Ingredients

- 2 cups chicken breast, diced
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until translucent.
- Add chicken and cook until browned.
- Add mushrooms and thyme, and cook until mushrooms soften.
- Pour in chicken broth and bring to a simmer.
- Season with salt and pepper, and cook for another 5 minutes.
- Serve hot.

- Use fresh herbs for better flavor.
- Serve with rice or pasta.
- Leftovers can be stored in the refrigerator for up to 3 days.
