A quick and easy chicken and rice dish cooked in one skillet.
Ingredients

- 1 lb chicken fillet, diced
- 1 cup rice
- 2 cups chicken broth
- 1 cup black beans, drained
- 1 cup corn, drained
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Heat a skillet over medium heat.
- Add diced chicken and cook until browned.
- Stir in rice, chicken broth, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until rice is tender.
- Sprinkle cheese on top and cover until melted.
- Garnish with fresh cilantro before serving.
Notes
- Use leftover chicken for a quicker meal.
- Add bell peppers for extra flavor.
- Adjust spice level to your preference.
