Instructions

  1. Heat a skillet over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in rice, chicken broth, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
  4. Bring to a boil, then reduce heat and cover.
  5. Simmer for 20 minutes or until rice is tender.
  6. Sprinkle cheese on top and cover until melted.
  7. Garnish with fresh cilantro before serving.
