Ingredients

- 2 cups wild rice
- 1 lb chicken breast, diced
- 2 medium sweet potatoes, cubed
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 cups chicken broth
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Toss sweet potatoes and mushrooms with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes.
- In a pot, bring chicken broth to a boil and add wild rice.
- Reduce heat, cover, and simmer for 45 minutes.
- In a pan, cook diced chicken until fully cooked.
- Combine cooked chicken, wild rice, and roasted vegetables.
- Garnish with fresh parsley before serving.
