Description

A hearty dish featuring chicken, wild rice, roasted sweet potatoes, and mushrooms.


Ingredients

  • 2 cups wild rice
  • 1 lb chicken breast, diced
  • 2 medium sweet potatoes, cubed
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potatoes and mushrooms with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread on a baking sheet and roast for 25-30 minutes.
  4. In a pot, bring chicken broth to a boil and add wild rice.
  5. Reduce heat, cover, and simmer for 45 minutes.
  6. In a pan, cook diced chicken until fully cooked.
  7. Combine cooked chicken, wild rice, and roasted vegetables.
  8. Garnish with fresh parsley before serving.
