  • 2 tbsp curry powder
  • 1 can coconut milk (13.5 oz)
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add onions and sauté until translucent.
  3. Stir in garlic and ginger, cook for 1 minute.
  4. Add chicken and cook until browned.
  5. Mix in curry powder and cook for another minute.
  6. Pour in coconut milk and chicken broth, stir well.
  7. Bring to a simmer and cook for 15 minutes.
  8. Add salt to taste and garnish with cilantro.
