Quick and easy chicken curry recipe for busy days.
Ingredients

- 1 lb chicken breast, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 can coconut milk (13.5 oz)
- 1 cup chicken broth
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add onions and sauté until translucent.
- Stir in garlic and ginger, cook for 1 minute.
- Add chicken and cook until browned.
- Mix in curry powder and cook for another minute.
- Pour in coconut milk and chicken broth, stir well.
- Bring to a simmer and cook for 15 minutes.
- Add salt to taste and garnish with cilantro.
Notes
- Serve with rice or naan.
- Adjust spice level by adding chili powder.
- Can use leftover chicken for quicker preparation.
