Chicken Florentine is a delightful dish that combines tender chicken breasts with a creamy spinach sauce, enriched with garlic and Parmesan cheese.


Ingredients

  • 4 boneless, skinless chicken breasts: About 1.5 lbs or 680 g
  • 4 cups fresh spinach: Approximately 120 g
  • 3 cloves garlic: Minced
  • 1 cup heavy cream: 240 ml
  • 1/2 cup grated Parmesan cheese: 50 g
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons olive oil: 30 ml
  • Salt and pepper: To taste

Instructions

  1. Season both sides of the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and fully cooked.
  3. Remove the chicken and sauté minced garlic in the same skillet for about 30 seconds.
  4. Add fresh spinach to the skillet and cook for 2-3 minutes until wilted.
  5. Reduce heat to medium-low, pour in heavy cream, and stir to combine.
  6. Add grated Parmesan cheese and ground nutmeg, stirring until the cheese melts and the sauce is smooth.
  7. Return the chicken to the skillet, spoon the sauce over it, and simmer for an additional 2-3 minutes.
  8. Serve the chicken with extra sauce and garnish with more Parmesan cheese if desired.
