- 4 boneless, skinless chicken breasts: About 1.5 lbs or 680 g
- 4 cups fresh spinach: Approximately 120 g
- 3 cloves garlic: Minced
- 1 cup heavy cream: 240 ml
- 1/2 cup grated Parmesan cheese: 50 g
- 1/4 teaspoon ground nutmeg
- 2 tablespoons olive oil: 30 ml
- Salt and pepper: To taste
Instructions
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and fully cooked.
- Remove the chicken and sauté minced garlic in the same skillet for about 30 seconds.
- Add fresh spinach to the skillet and cook for 2-3 minutes until wilted.
- Reduce heat to medium-low, pour in heavy cream, and stir to combine.
- Add grated Parmesan cheese and ground nutmeg, stirring until the cheese melts and the sauce is smooth.
- Return the chicken to the skillet, spoon the sauce over it, and simmer for an additional 2-3 minutes.
- Serve the chicken with extra sauce and garnish with more Parmesan cheese if desired.
