A quick and tasty chicken fried rice dish.
Ingredients

- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the mixed vegetables and stir-fry for 2-3 minutes.
- Push the vegetables to the side and pour the beaten eggs into the pan. Scramble the eggs.
- Add the cooked chicken and rice to the pan. Mix everything together.
- Pour the soy sauce over the rice mixture and stir well.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.

- Use day-old rice for better texture.
- Feel free to customize with your favorite vegetables.
