Description

A quick and tasty chicken fried rice dish.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes.
  3. Push the vegetables to the side and pour the beaten eggs into the pan. Scramble the eggs.
  4. Add the cooked chicken and rice to the pan. Mix everything together.
  5. Pour the soy sauce over the rice mixture and stir well.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.

  • Use day-old rice for better texture.
