Instructions
- Heat vegetable oil in a large skillet over medium heat.
 - Add diced chicken and cook until browned.
 - Push chicken to the side, add mixed vegetables, and stir-fry for a few minutes.
 - Scramble eggs in the center of the skillet.
 - Add cooked rice and soy sauce, mixing thoroughly.
 - Season with salt and pepper.
 - Garnish with chopped green onions before serving.
