A comforting chicken parmesan soup made in a crockpot.
Ingredients

- 1 pound boneless, skinless chicken fillet
- 4 cups chicken broth
- 1 can (15 oz) crushed tomatoes
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked pasta
- 1 cup grated parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Place the chicken fillet in the crockpot.
- Add chicken broth, crushed tomatoes, onion, garlic, basil, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the chicken, shred it, and return it to the pot.
- Add pasta and cook on high for an additional 30 minutes or until pasta is tender.
- Stir in parmesan cheese and parsley before serving.
Notes
- Adjust seasoning according to your taste.
- Use any pasta shape you prefer.
- Garnish with extra parmesan if desired.
