Ingredients

- 1 lb chicken breast, diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup peas
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups potatoes, diced
- 1/2 cup flour
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onions, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 more minute.
- Add chicken and cook until no longer pink.
- Stir in flour and cook for 2 minutes.
- Add chicken broth and potatoes. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in cream, peas, thyme, salt, and pepper.
- Simmer for an additional 5 minutes.
- Serve hot.

- Can substitute turkey for chicken.
- Use frozen vegetables for convenience.
