Ingredients

  • 1 cup ranch dressing
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced bell peppers and onions; sauté until soft.
  3. In a bowl, mix shredded chicken with ranch dressing.
  4. Place a tortilla in the skillet, then layer with chicken mixture and cheese.
  5. Add another tortilla on top.
  6. Cook until the bottom tortilla is golden, then flip and cook the other side.
  7. Remove from skillet and slice into wedges.
  8. Serve warm with extra ranch dressing if desired.
