A refreshing salad featuring crispy rice topped with flavorful chicken shawarma.
Ingredients

- 2 cups cooked rice
- 1 pound chicken fillet, sliced
- 2 tablespoons shawarma spice mix
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup parsley, chopped
- Salt and pepper to taste
- 2 tablespoons tahini
Instructions
- Season chicken with shawarma spice mix, salt, and pepper.
- Heat olive oil in a pan over medium heat.
- Add chicken and cook until browned and cooked through, about 7-10 minutes.
- In another pan, add cooked rice and fry until crispy.
- In a large bowl, combine crispy rice, chicken, tomatoes, cucumber, red onion, and parsley.
- Drizzle tahini over salad and toss gently to combine.
- Serve immediately.

- Can substitute chicken with tofu for a vegetarian option.
