Ingredients

  • 1 lb chicken breast, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can coconut milk (13.5 oz)
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Add the diced chicken and cook until browned.
  4. Stir in the curry powder and cook for another minute.
  5. Add the sweet potatoes and coconut milk. Bring to a simmer.
  6. Cover and cook for 20-25 minutes, or until sweet potatoes are tender.
  7. Season with salt to taste and garnish with cilantro.
