- 1 lb chicken breast, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can coconut milk (13.5 oz)
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the onion, garlic, and ginger. Sauté until the onion is translucent.
- Add the diced chicken and cook until browned.
- Stir in the curry powder and cook for another minute.
- Add the sweet potatoes and coconut milk. Bring to a simmer.
- Cover and cook for 20-25 minutes, or until sweet potatoes are tender.
- Season with salt to taste and garnish with cilantro.
