A hearty and flavorful chicken taco soup that is easy to prepare.
Ingredients

- 1 pound of chicken fillet
- 1 can of black beans, drained
- 1 can of corn, drained
- 1 can of diced tomatoes
- 1 packet of taco seasoning
- 4 cups of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, and bell pepper until soft.
- Add the chicken fillet and cook until browned.
- Stir in the taco seasoning, black beans, corn, diced tomatoes, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Shred the chicken in the pot using two forks.
- Season with salt and pepper to taste.
- Serve hot and enjoy.
