Ingredients

- 2 lbs boneless chicken thighs
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 can (15 oz) tomato sauce
- 1 cup coconut milk
- 2 tbsp garam masala
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Place chicken in the crockpot.
- Add onion, garlic, and ginger.
- Pour in tomato sauce and coconut milk.
- Add garam masala, cumin, coriander, turmeric, and salt.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours.
- Serve with rice and garnish with cilantro.
Notes
- For a spicier dish, add chili powder.
- Can substitute chicken thighs with fillet.
- Serve with naan for a complete meal.
