Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Avocado, diced for garnish
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in cumin and chili powder, cook for 1 minute.
  4. Add chicken broth, diced tomatoes, corn, and black beans.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add shredded chicken and season with salt and pepper.
  7. Serve hot, garnished with tortilla strips, avocado, and cilantro.
