Ingredients

  • 1 onion, chopped

  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in cooked chicken and thyme.
  4. Add chicken broth and wild rice. Bring to a boil.
  5. Reduce heat and simmer for 45 minutes, or until rice is tender.
  6. Stir in heavy cream and season with salt and pepper.
  7. Serve hot.
