Description
A hearty and comforting soup made with chicken, wild rice, and vegetables.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup wild rice
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in cooked chicken and thyme.
- Add chicken broth and wild rice. Bring to a boil.
- Reduce heat and simmer for 45 minutes, or until rice is tender.
- Stir in heavy cream and season with salt and pepper.
- Serve hot.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This soup freezes well; just omit the cream before freezing.
