Ingredients

- 1 cup cherry tomatoes, halved

Instructions
- Rinse and drain the chickpeas.
- Prepare the vegetables by chopping and dicing them.
- In a bowl, combine chickpeas, tomatoes, cucumber, bell peppers, carrots, and mixed greens.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the veggie bowl and toss to combine.
- Serve immediately or chill in the fridge for 30 minutes before serving.
