Ingredients

- 2 cups cooked rice
- 1 lb chicken fillet, diced
- 1/4 cup chipotle ranch dressing
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheese
- 4 large flour tortillas
- 1 cup lettuce, shredded
- 1 tomato, diced
Instructions
- Cook the chicken in a skillet over medium heat until no longer pink.
- Mix the chicken with chipotle ranch dressing.
- Warm the tortillas in a microwave or skillet.
- Layer rice, chicken, beans, corn, cheese, lettuce, and tomato on each tortilla.
- Wrap the tortillas tightly to form burritos.
- Serve immediately or wrap in foil for later.
Notes
- Feel free to add more vegetables as desired.
- Use whole grain tortillas for a healthier option.
- Adjust the spice level with more or less chipotle ranch dressing.
