Ingredients

  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups blackberries
  • 1 cup blackberry jam
  • 1 cup heavy cream
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla. Mix until smooth.
  5. Stir in boiling water until well combined.
  6. Pour the batter into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cakes cool for 10 minutes before transferring to wire racks.
  9. Once cooled, spread blackberry jam between layers.
  10. Whip cream with powdered sugar until peaks form.
  11. Frost the top and sides of the cake with whipped cream.
  12. Decorate with fresh blackberries.
