Ingredients

  • 1 tablespoon + 1/4 teaspoon baking powder
  • 1 1⁄4 teaspoons baking soda

  • 1 1⁄4 cups sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 3 large eggs
  • 1/2 cup milk
  • 3 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips
  • Optional: 1 tablespoon coarse sugar for topping

Instructions

  1. Preheat oven to 425°F (220°C) and prepare muffin tin with paper liners or cooking spray.
  2. In a large bowl, combine flour, baking powder, baking soda, salt, and sugar. Mix well.
  3. In a separate bowl, whisk together melted butter, eggs, milk, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Avoid overmixing.
  5. Fold in chocolate chips and reserve a few for topping the muffins.
  6. Scoop batter into muffin cups, filling to the top. Top with reserved chocolate chips and coarse sugar, if desired.
  7. Bake for 7 minutes at 425°F (220°C), then reduce temperature to 375°F (190°C) and bake for an additional 15-20 minutes.
  8. Cool for 5-10 minutes in the pan, then transfer to a wire rack to cool completely.

Notes

  • For a dairy-free version, substitute milk with almond or oat milk, and use vegetable oil or coconut oil instead of butter.
