- 3 large eggs
- 1/2 cup milk
- 3 teaspoons vanilla extract
- 2 cups semi-sweet chocolate chips
- Optional: 1 tablespoon coarse sugar for topping
Instructions
- Preheat oven to 425°F (220°C) and prepare muffin tin with paper liners or cooking spray.
- In a large bowl, combine flour, baking powder, baking soda, salt, and sugar. Mix well.
- In a separate bowl, whisk together melted butter, eggs, milk, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Avoid overmixing.
- Fold in chocolate chips and reserve a few for topping the muffins.
- Scoop batter into muffin cups, filling to the top. Top with reserved chocolate chips and coarse sugar, if desired.
- Bake for 7 minutes at 425°F (220°C), then reduce temperature to 375°F (190°C) and bake for an additional 15-20 minutes.
- Cool for 5-10 minutes in the pan, then transfer to a wire rack to cool completely.
Notes
- For a dairy-free version, substitute milk with almond or oat milk, and use vegetable oil or coconut oil instead of butter.
- For extra moisture, you can replace some of the sugar with mashed bananas or applesauce.
