- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup molasses
- 2 large eggs
- 1/2 cup chopped crystallized ginger
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, cream butter and brown sugar until fluffy.
- Add molasses and eggs to the butter mixture, mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in chopped crystallized ginger.
- Pour the batter into a greased baking pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Serve with whipped cream or ice cream.
- Store leftovers in an airtight container.
