Ingredients

  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup peppermint frosting
  • Chocolate shavings for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  5. Stir in boiling water until well combined.
  6. Pour batter evenly into prepared pans.
  7. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  8. Cool cakes in pans for 10 minutes, then remove to wire racks to cool completely.
  9. Spread peppermint frosting between layers and over the top and sides of the cake.
  10. Add chocolate shavings for garnish.
