A festive chocolate mint cake perfect for Christmas celebrations.
Ingredients

- 2 cups all-purpose flour
- 1 ¾ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup peppermint frosting
- Chocolate shavings for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
- Stir in boiling water until well combined.
- Pour batter evenly into prepared pans.
- Bake for 30 to 35 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then remove to wire racks to cool completely.
- Spread peppermint frosting between layers and over the top and sides of the cake.
- Add chocolate shavings for garnish.
Notes
- Store in an airtight container.
- Can be made a day in advance.
- Adjust peppermint flavor to taste.
