Delicious chocolate stuffed pancakes that are vegan and gluten-free.
Ingredients

- 1 cup gluten-free flour
- 1 tablespoon cocoa powder
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup almond milk
- 2 tablespoons vegetable oil
- 1/2 cup vegan chocolate chips
Instructions
- In a bowl, mix gluten-free flour, cocoa powder, sugar, baking powder, and salt.
- Add almond milk and vegetable oil. Stir until smooth.
- Heat a non-stick skillet over medium heat.
- Pour 1/4 cup of batter onto the skillet.
- Add a few chocolate chips in the center of the pancake.
- Cook until bubbles form, then flip and cook until golden.
- Repeat with remaining batter.
Notes
- Store leftovers in the fridge for up to 3 days.
- Use any plant-based milk of your choice.
- Adjust sweetness according to your preference.
