This is a rich and moist vegan chocolate zucchini cake.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup grated zucchini
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup non-dairy milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the dry ingredients: flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- In another bowl, combine the zucchini, applesauce, oil, vanilla, and non-dairy milk.
- Pour the wet mixture into the dry ingredients and mix until just combined.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
